Easy to make healthy and tasty breakfast to boost your immunity

Frittata, an egg-based Italian dish similar to an omelet or crustless eggs is enriched with healthy stuffing such as meats, vegetables, and cheese (if more richness required) will make your breakfast a total sumptuous one with added good taste as well as immunity driven to have a healthy day ahead. One can have it in dinner or lunch too and enjoy it anytime.

Stovetop Frittata Recipe

Serving Size: 2 persons

Ingredients:

  • 10 green beans
  • 15 cherry tomatoes(any tomato can be used)
  • 4 button mushrooms
  • 2 onions
  • 4 large eggs
  • 1 tablespoon water
  • 3 tablespoons grated parmesan or Amul cheese block
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon freshly grated black pepper
  • 10 green peas
  • 2 big capsicums
  • 500gm shredded chicken or mutton
  • Oil for frying
  • 8-inch pan with lid

Instructions:

Wash off the veggies and meat, cut green beans into 1 to 2-inch long pieces, slice the mushrooms and capsicum. Chop the onions. You can either whisk the whole onion directly into the eggs or save some for the topping later. Mix eggs, parmesan or Amul cheese, water, salt, and pepper using a hand whisk.

Add a little oil to the pan and heat green beans and peas for 2 minutes over medium-high heat. Add the rest of the veggies, the meat of your choice, and fry for an additional 5 minutes. Remove pan from the heat and pour the veggies and meat in the bowl with the eggs. Distribute the veggies and meat in the pan with a spatula. Cover the pan with a lid and let the frittata cook over medium heat for about 5 minutes, until the bottom side is golden brown and the top isn’t runny anymore.

If you are using a pretty small pan, it’s possible that the bottom is golden already but the top is still a little runny. If that happens, you can put the pan under the broiler for a couple of minutes – only if you are using a heatproof pan. Top with onion rings, coriander and serve with bread and/or a salad and enjoy your tasty meal. You can avoid cheese and may add potatoes too to make it a heavy meal.
